Gnudi is a type of gnocchi made specifically from ricotta and flour. Roll these light, fluffy dumplings in a pan of melted butter, sage leaves, and parmesan to experience the taste of a comforting dish.
28 ea. Ricotta gnudi
6 oz. butter
12 ea. sage leaves
¼ cup grated parmesan
aged balsamic vinegar (as needed)
*Poach gnudi in simmering salted water for 3 minutes. Meanwhile melt and brown butter in a sauté pan. Add sage leaves and fry lightly. Add the drained gnudi into the pan and lightly toss it to cover it with the melted butter. Place 7 per plate. Top with parmesan and drizzle vinegar over the top.
