Pumpkin Chutney

Don’t know which condiment to use with your curry, cold meat, or cheese? Try pumpkin chutney! It enlivens all plain meals with its sweet, spicy, and sharp flavors.


3 cups white wine vinegar

1 tbsp. pickling spice mix

3 lb. pumpkin (peeled, seeded & cubed)

1 lb. tomato (skinned & cubed)

2 cups onion (diced)

1/2 cup golden raisins

1 tbsp. orange zests

4 cups sugar

2 tsp. ground cinnamon

1 cup pecan chopped

*Bring vinegar and pickling spices to a boil. Strain and let it cool. In a stock pot, place the pumpkin and stock. Add remaining ingredients, excluding the pecans. Bring it to a boil then simmer until it thickens. This should take about 2 hours. Add the nuts. Portion the chutney in jars and freeze them for future use.
