French fries (pommes frites in French) are an easy snack (or side dish) to make at home. Sprinkle in a handful of chopped parsley to give your fries an elegant touch.
10 lb. Kennebec potatoes
¼ cup Kosher salt
¼ cup chopped parsley
*Wash and scrub potatoes. Use a press-cutter to turn the potatoes into strips. Soak the potatoes in a bucket overnight. Drain and dry the potato strips. Blanch the strips in 250F until soft. Make sure they do not change color. Freeze in single layer. Then fry until crisp. Toss in salt and chopped parsley.
