This easy, versatile pasta dough recipe will prepare you for pasta dishes such as ravioli and lasagna.

*Yield: 8 packages

3560 g. 00″ flour

1060 g. flour

1320 g. yolks (pasteurized)

1200 g. eggs

80 g. extra virgin olive oil

5 tbsp. water

*Use a dough hook to mix wet ingredients with dry ingredient for 8 minutes on slow speed.
