Irish Beef & Guinness Stew

A total Irish classic, and perfect for a chilly day, so roll up your sleeves and prepare for warm delicious sustenance.

200 milliliters (6 ¾ ounces) of Guinness Foreign Extra Stout
400 grams (14 ounces) Stewing Diced Beef
1 medium Onion – diced
1 large Carrot – diced
1 large Celery Stalk – diced
1 large Parsnip – diced
1 liter of thick Beef Stock
Sprigs of Fresh Thyme & Rosemary

Stir fry the beef, add the vegetables, and cook until tender. Then pour in the Guinness and reduce by half. Add the beef stock and herbs and simmer very slowly between 1-1 ½ hours. Serve with mashed potatoes. Tip: This stew is always better made a day in advance.
