Grilled Live Lobster with Corn on the Cobb, Homemade Coleslaw and served with a “Green Goddess” Dipping Sauce

When lobster is on the line, you need to do it justice and this recipe does just that. Pair your lobster with a corn on the cob, coleslaw, and a mayonnaise based, vegetable dipping sauce that will leave you wanting more!

 

1 live lobster per person

1 sweet corn on the cob per person

 

Coleslaw: 8 oz.

2 cups mayo

¼ cup sugar

¼ cup cider vinegar

½ tbsp. celery salt

2 ½ green cabbage (diced)

1 ¼ red cabbage (diced)

1 ¼ carrot (diced)

*Mix together mayo, sugar, vinegar, celery salt. Then mix in remaining ingredients.

 

Garlic-herb butter/clarified butter

Butter (softened)

¼ cup basil (finely chopped)

½ bunch parsley

¼ cup garlic (finely chopped)

¼ cup olive oil

*In a blender, combine olive oil, garlic, parsley and basil. Blend until smooth. In a bowl, add blended herb to butter and fold together. Combine all ingredients.

 

Green Goddess dipping sauce: 4 oz.

1 ½ cup mayo

2 oz. spinach

2 oz. watercress

1 ½ tbsp. parsley

1 ½ tbsp. tarragon

3 cloves garlic

2 ½ oz. vegetable oil

1 ½ tbsp. Dijon mustard

1 tbsp. lemon juice

*Combine spinach, watercress, parsley, tarragon, garlic, vegetable oil, Dijon mustard and lemon juice in a blender. Blend until smooth. In a bowl, mix together mayo with blended mixture.
