Grilled Chicken Breast with Balsamic Dressing

There are many ways to enjoy a nice piece of chicken but this recipe offers a sweet-tangy twist.

 

1 grilled chicken breast

1 tbsp. balsamic vinegar

1 tbsp. extra virgin olive oil

1 oz. slice cambazola cheese

1 oz. caramelized onion

1/4 cup hydroponic watercress (leaves only)

3×5 rustic roll

 

Cucumber-Tomato-Onion Salad

1 hot house cucumber (1/2 inch dice)

20 cherry tomato (cut in half)

3 oz. red onion (julienne)

salt and pepper to taste

rice wine vinegar to taste

*Combine all ingredients in a mixing bowl and season to taste.

 

Balsamic Mayonnaise: 1 oz.

1 cup mayonnaise

3 tbsp. balsamic vinegar

2 tsp. Dijon mustard

1/2 tbsp. garlic (minced)

salt and pepper to taste

granulated sugar to taste

*Combine all ingredients in a mixing bowl and season to taste.

 

*Marinate chicken with balsamic vinegar and virgin olive oil for at least 4 hours. Slice roll lengthwise and spread with balsamic vinegar. Arrange the chicken breast, caramelized onion and sliced cheese and melt under broiler. Top it off with watercress leaves. Cut it in half and arrange on a plate. Serve with cucumber salad.
