If you’re looking for a simple appetizer that’ll kick-start your guests’ appetites, these airy, delicate French cheese puffs will do the trick.

1 cup milk

1 cup water

8 oz. cubed unsalted butter

1 tablespoon kosher salt

2 cups AP flour

8 large eggs

2 cups shredded Gruyere cheese

1 teaspoon white pepper

1 teaspoon ground nutmeg

0.5 tsp. paprika

Preheat oven to 400 degrees. In a pot, combine water, milk, butter, and salt. Bring it to a boil. Add flour and stir with a wooden spoon on low heat. Cook until small balls form and smells of wheat. Remove from the heat and place in a mixing bowl. Rest for 1 minute. Beat eggs in one at a time. Add 1.5 cups of cheese, pepper, nutmeg, and paprika. Transfer to a pasty bag with ½ inch tip. On a parchment sheet pan, pipe quarter size mounds, leaving each 2 inch apart. Sprinkle with cheese. Bake for 22 minutes. Cool and store.
