German Apple Pancake

This dessert features a puffy, golden brown pastry loaded with caramelized apples. Nothing like a slice of German apple pancake to end your meal!

7 eggs

1 tbsp. vanilla

3/4 cup sugar

1/2 cup all-purpose flour

1 1/2 tsp. baking powder

1/4 tsp. cinnamon

Granny Smith apples (peeled, cored and sliced)

blueberries (optional)

*Preheat oven to 350 degrees. In medium mixing bowl, combine first 6 ingredients and blend to make a smooth batter. In a preheated pan, add butter and saute 8 apples slices (about 1/2 an apple). Add 4 ounces of the batter and cover the apples evenly with it. Place the pan in the oven. Bake until golden brown about 20-25 minutes. Remove from the oven and flip onto a plate. Dust with powdered sugar. Garnish and serve immediately.
