Fresh Ricotta

Instead of buying ricotta, make it on your own! Be creative and use your ricotta for anything from dips to desserts.

1 gal. milk

1 qt. buttermilk

1 pt. cream

1 tsp. salt

*Add all ingredients together and bring to 170 degrees. Allow it to separate. Let stand 10 minutes. Strain it through cheesecloth in a perf-pan.

 

*Note: For ricotta fritters press for 45 minutes to remove more moisture.
