Brussels Sprouts with Smoked Bacon and Pearl Onions

Sometimes a plain bowl of bittersweet brussels sprouts just won’t cut it. Make the dish more savory by adding small bits of bacon to it.

 

2 cups brussels sprouts (outer leaves removed & halved)

3/4 cup pearl onions (boiled with water to cover in one layer, salt, sugar & olive oil)

1/4 cup smoked bacon lardons

2 tbsp. veal stock

1/2 tbsp. cider vinegar

thyme leaves (as needed)

*In olive oil, roast the brussels sprouts cut side down until caramelized and soft. Drain excess fat. Add onions and bacon to pan and heat to caramelize. Return brussels sprouts to pan. Add veal stock and glaze. Finish with cider vinegar and garnish with picked thyme leaves.
