Braised Lamb Shank with Chickpea Pancakes, Harissa and Lamb Jus

It is always a win-win situation when your guests are impressed by an easy-to-make recipe. These juicy, tender lamb shanks not only taste amazing, but they also look the part. In other words, they will steal the show.


*Serves 10 people


10 ea. lamb shanks

4 oz. olive oil

2 ea. yellow onions

5 ea. roma tomatoes (chopped)

1 ea. carrot

4 ea. stalks of celery

2 cups red wine

1 cup sherry wine vinegar

6 cups chicken stock

6 cups veal stock

2 sprigs rosemary

Salt and pepper

2 oz. harissa

*Season the shanks with salt and pepper. Preheat he convection oven to 550 degrees. Put the shanks on a sheet pan and roast in the oven until golden brown. Remove from oven. In a wide, shallow pot, saute the vegetables until they caramelize. Add the tomatoes, rosemary, and all of the wine stock. Then add the shanks. Bring to a simmer and cover. Transfer everything to a 300 degree oven and braise for 3 hours or until soft but not to the point where it falls off the bone. Reduce the braising liquid for the sauce. Add the harissa and serve.

Chick Pea Pancakes

*Makes 20 large pancakes. Preparation time: 1 hour. Total time: 2 hours.

1 stick of butter

5 ea. red onions (sliced)

1 can garbanzo beans (drained)

1/2 gallon cream

20 ea. roasted garlic cloves (roast in olive oil)

16 ea. whole eggs

1 cup chopped herbs (parsley, basil, thyme)

4 cups all-purpose flour

salt and pepper

*Add the butter to a wide, shallow pot. Add the onion and cook until caramelized. Add the drained garbanzo beans and cream. Reduce by 1/4. Season it with salt and add the roasted garlic. Let it cool. Blend it in the food processor until smooth. Add the eggs and blend. Add the flour and blend until smooth. Add the herbs.

To make a cake, preheat the oven to 400 degrees. In a saute pan, heat until hot. Add some oil and approximately 5 oz. of the batter. Put the pan in the oven and cook until golden brown on the bottom for about 5 minutes. Flip and cook for another 4 minutes. Check to see is the cake is cooked through and serve.
