Asian “Chopped” Chicken Salad

This Asian-style chicken salad is fresh and healthy. The earthy flavors from the vegetables and nuts make it a delicious, nutritious meal.


5 lb. nappa cabbage

1 lb. red cabbage

10 ea. carrots

10 ea. green onion

2 lb. chicken breast (cooked and diced)

10 oz. cucumber

7 oz. peppers

2 oz. mandarin oranges

1/4 lb. wonton strips fried

1/4 lb. almond and peanut

1/4 lb. rice noodles fried

10 oz. sesame vinaigrette

*Mix all the ingredients together except the fried rice noodle. Put the mix in a bowl plate. Place the fried rice noodle on top of the mix and sprinkle the parsley on top.
