Ahi Tuna Vietnamese Roll

2 ea. Vietnamese rice paper

1/2 oz. carrot batonnets

1/2 oz. celery batonnets

1/2 oz. daikon batonnets

1/2 oz. cucumber batonnets

1/4 ea. avocado (sliced)

fresh mint

fresh cilantro

daikon sprout

toasted sesame seed

*Softened rice paper in hot water for 10-15 seconds, then place on a cutting board crossing each other. Display tuna, vegetables and fresh herbs with sesame seed length wise. Roll like a sushi then cut in small pieces. Display on a plate topped with sesame seed and some of the tuna dressing. You can serve this dish with a side of soy sauce or garlic chili sauce.
